I am back here after few days’ holidays.Hope you all had a great time with family and friends.I had a little break from the blog.So after a holiday, I thought of sharing an easy rice recipe.
Recently I found a recipe for Peanut Rice from my fellow blogger friend at Kausers Kitchen. The recipe sounds easy to prepare & a good idea to use left over rice. We like rice for everyday meal, so I always happy when I found a new rice recipe. Last weekend, I tried this Peanut Rice and it was delicious with the taste of Peanuts. Hope you also would enjoy this easy rice dish!!
Here is my adapted recipe from Kausers Kitchen.
Ingredients (For 2 servings)
2 Cups Cooked rice (leftover rice can be used)
1/2 cup roasted peanuts
1 carrot grated
1 cup of mix vegetables (carrot,leek,capsicum etc)
1 onion sliced
2 tspn Soya sauce
1 tspn red chilli powder
¼ tspn turmeric powder
1 sprig curry leaves
Butter or ghee for frying
1 tbspn Ginger Garlic paste
Salt as per taste
Method
Roast peanuts and keep aside.
Heat butter or ghee in a pan, add ginger garlic paste once it is hot.
Then add curry leaves & sliced onion. Fry until onions are tender.
Then add grated carrot, and other vegetables. Fry for few minutes.
Now add chilli powder & turmeric powder to the mix. Add a pinch of salt. Be careful with salt as we add soy sauce too.
Add soy sauce and cook for another few minutes.
Now add the roasted peanuts and cooked rice into it. Mix well.
Serve hot & enjoy!!
